1. Why has Spock never mentioned Sybok before?

As we see in the movie, Spock has a lot of trouble (for a Vulcan) in initially explaining Sybok to Kirk and McCoy. The fact that he (Sybok) embraces his emotions so flamboyantly spits on everything Spock believes and stands for. As such he is dissapointed and embaressed about Sybok, so it understandable that would be unwilling to discuss him. Unfortunatly, necessity forces him to discuss Sybok. His denial of Sybok continues unresolved throughout their seperation as children right up until Syboks "death"....

2. How the hell can a Vulcan mercenary and a bunch of slack-jawed yokels commandeer a starship?

Well when you think about it, its not that hard at all. When Sybok captured Kirk and the rest of the command crew, he probably threatened to harm him and the others if he informed the Enterprise of his capture while en route back to the Enterprise. As such, during the Klingon attack, Chekov in command of the Enterprise is unaware of the situation aboard the shuttlecraft. Infact Chekov dosnt know the situation until Sybok enters the bridge. By this time, Sybok would of "released the pain" of the remaining members of the command crew, and therefore he has control of the Enterprise because the rest of the ship obeys the command crew and Kirk is no where to be seen. Apperently having your pain released makes you just as determined to find Sha-ka-ree as Sybok himself.

3. So Sybok went around the entire crew of the Enterprise releasing their pain!?

I think he did, but remember the Enterprise is only operating with a "skeleton crew" at the time, and usually there are around 300-400 crewmembers on a fully functional Enteprise-A. A fraction of this are currently aboard, so that would mean perhaps 50-100 crewmembers. All Sybok has to do is practically look at them to release their pain. The fact that he wasnt being overtly hostle would of also helped...

4. If releasing pain makes you want to follow Sybok, why dont Kirk, McCoy and Spock follow him as well?

Kirk did not have his pain released so he is in the same mind-set as he was before, McCoy and Spock feel overwhelming loyalty and freindship to Kirk and this is more important to him then following Sybok therefore they stay.

5. Why the hell does the Enterprise have 70-odd decks, explain that smart-ass...

I cant find any possible explanation for this.

6. Why did Sybok go to all these extraordinary lengths to get to the Great Barrier, couldnt he of chartered a space flight and commandeered that instead?

Well Sybok obviously did his homework for this mission. I think he was aware that should a high-profile kidnapping of dignitaries would result in the Enterprise being sent, and only the Enterprise. The motivation for him the wanting the Enterprise in particular would be the fact that its a powerful starship, a small chartered starship might not of been able to withstand the forces of the great barrier. The fact that he knew Spock was a member of the Enterprises crew would also provide motivation. Sybok could of been feigning his suprise at seeing Spock if my hypothosis is to be believed...
