Another reason for red...

It makes sense that Big Red is a sea animal, which would explain why it can barely keep up with Kirk.

I got a possible reason for red: Big Red was mad! Like the octopus, Big Red could change color based on his mood, red being the color for anger or fighting to protect his territory. Maybe Big Red did not see Kirk as food (since he already had the polarilla to eat) but more of a threat to his territory. So, he turned red, showcasing his anger, and attacked Kirk. This would also explain why Big Red roared and acted in a threatening posture, since predators really don't roar at their prey when attacking.
